
We came to Canada in the late 50’s; a time when workers were needed to construct government buildings. Living close to a butcher shop, my mother was able to feed our growing family with animal kidneys, livers, hearts, bones and intestines that the butcher was throwing away. As farmers, cheese makers and shepherds, my family knew how to use the butcher’s throw-away items to make pickled pigs’ skin, sausages with intestines, bones for broth, fried liver with onions, kidneys for stew. Nothing was wasted. Nothing was thrown out.
Feeding a family of eight, with one income was no easy task. We never knew we were poor. We always had food to eat and share with constant visitors dropping in. Thanks to my mother’s sewing skills and her ability to turn hand me downs to fit properly while being trendy, we felt we had new clothes. My parents refused to eat at restaurants saying they didn’t know what they eating.
There’s Nothing 2 Eat was birthed by my parents. Their love and respect for food, the land and their relationship with animals helped them to live a balanced healthy life despite many discomforts. Instead of throwing away stale bread, they made garlic bread; leftover coffee was made into tiramisu, leftover bread dough became pizza.
Today, following my parent’s tradition, making two meals for the cost of one –THERE’S NOTHING 2 EAT (TN2E) is a grassroots movement to nurture a healthy planet one meal at a time by using foods left in pantries, cupboards, fridges of households, restaurants, hospitals and institutions by using good “throw-away foods” to create tasty meals with a little know how and adding a few more ingredients.
